And with the arrival of autumn comes the craving for baked goods. Like homemade oreos. It's no secret that I have a soft spot for the creamy filling sandwiched between chocolate cookies, crunchy and flavorful and delicious. And homemade oreos? Simple, cheaper, and better for you.
homemade oreos
adapted from smitten kitchen's homemade oreos
ingredients for the chocolate wafers:
1 1/4 cups all-purpose flour
1/2 cup unsweetened Dutch process cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature, unsalted butter
1 large egg
ingredients for the filling:
1/2 cup (1 stick) room-temperature, unsalted butter
2 cups sifted confectioners’ sugar (or powdered sugar)
2 teaspoons vanilla extract
directions
Preheat oven to 375°F and set two racks in the middle of the oven.
In a food processor, or bowl of an electric mixer, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until dough comes together in a mass.
Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately two inches apart. With moistened hands, slightly flatten the dough. Bake for 9 minutes, rotating once for even baking. Set baking sheets on a rack to cool.
To make the cream, place butter in a mixing bowl, and at low speed, gradually beat in the sugar and vanilla. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.
To assemble the cookies, in a pastry bag with a 1/2 inch, round tip, pipe teaspoon-size blobs of cream into the center of one cookie. Place another cookie, equal in size to the first, on top of the cream. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream (makes 25-30 sandwich cookies). Eat with a tall glass of milk and enjoy!

ReplyDeleteAgreed- photography (and writing) can't be forced. At all. They're at their best when they flow from a soul whose emotions- good, bad, upset, grateful, sweet, compassionate, angry- are full. Then they seem to flow into each frame you shoot and each sentence you write.

ReplyDeleteI'm like that too, sometimes I go for days without taking photographs. And I'm actually ok with that. Sometimes the creative part of me just needs to take a rest so I can do something like read a book, organize, or just methodically do homework.

Mmm, I have made these so many times and they are just heavenly! There is just something about the light chocolate cookie with the rich cream that is just delicious.
ReplyDeleteHowever, they definitely are not cheaper or better for you at all. $2 or $3 for a regular bag of oreos verses paying about four or five times that amount for each ingredient is a huge difference.
Also, considering how much butter is in them...I wouldn't say they are "better for you" either {that is, unless you are referring to the vast amount of chemicals and ickyness in regular oreos}.
Just some thoughts.
By the way - I promise I did not mean the above to come across as rude or anything. I know how internet talk can come across as mean when you are not actually "saying" it in person.
